Galatoire's Shrimp Rémoulade Recipe

Ingredients
  • 1 tsp Worcestershire sauce
  • 2 lbs cooked fresh large shrimp, peeled & deveined
  • 1/2 c ketchup
  • 3/4 c fresh Italian parsley
  • 1/2 c Creole mustard
  •  Lettuce leaves
  • 1 tbsp prepared horseradish
  • 4 celery ribs, coarsely sliced
  • 1/2 c tomato purée
  • 1 small onion, sliced (about 1/2 c)
  • 4 green onions, coarsely sliced
  • 2 tsps paprika (optional)
  • 1/2 c red wine vinegar
  • 1 c plus 2 tbsps vegetable oil

Directions
  • Step #1 Pulse first 4 ingredients in a food processor/blender until finely sliced.
  • Step #2 Add vinegar & next 5 ingredients, & process until well mixed & smooth, stopping to scrape down sides.
  • Step #3 With processor running, pour oil in a slow, steady stream, processing until mixed.
  • Step #4 Stir in paprika, if desired.
  • Step #5 Cover up & chill 6 to 8 hrs.
  • Step #6 Stir chilled sauce; pour over shrimp, carefully tossing to coat.
  • Step #7 Serve on lettuce leaves.
