Hot Spiced Shrimp
Ingredients
1 tsp Worcestershire sauce
2 lbs cooked fresh large shrimp, peeled & deveined
1/2 c ketchup
3/4 c fresh Italian parsley
1/2 c Creole mustard
Lettuce leaves
1 tbsp prepared horseradish
4 celery ribs, coarsely sliced
1/2 c tomato purée
1 small onion, sliced (about 1/2 c)
4 green onions, coarsely sliced
2 tsps paprika (optional)
1/2 c red wine vinegar
1 c plus 2 tbsps vegetable oil
Directions
Step #1 Pulse first 4 ingredients in a food processor/blender until finely sliced.
Step #2 Add vinegar & next 5 ingredients, & process until well mixed & smooth, stopping to scrape down sides.
Step #3 With processor running, pour oil in a slow, steady stream, processing until mixed.
Step #4 Stir in paprika, if desired.
Step #5 Cover up & chill 6 to 8 hrs.
Step #6 Stir chilled sauce; pour over shrimp, carefully tossing to coat.
Step #7 Serve on lettuce leaves.
