Lemon Soy Aïoli Recipe

Ingredients
  • 8 oz soft tofu, drained
  • 3/4 tsp sea salt
  • 3 tbsps fresh lemon juice
  • 2 garlic cloves, peeled
  • 1 1/2 tbsps olive oil
  • 2 c water

Directions
  • Step #1 Bring 2 c water to a boil in a small saucepan.
  • Step #2 Add garlic, & cook 10 mins.
  • Step #3 Drain.
  • Step #4 Place tofu on several layers of paper towels; cover with extra paper towels.
  • Step #5 Let stand 10 mins.
  • Step #6 Combine garlic, tofu, & remaining ingredients in a mixer or food processor/blender; process until smooth.
  • Step #7 Serve with fresh vegetables.
