Cheddar-black Pepper Biscuits Recipe

Ingredients
  • 1 1/2 tsps baking powder
  • 1 egg white, lightly beaten
  • 3/4 c skim milk
  • 2 c all-purpose flour
  • 1/2 tsp coarsely ground pepper, divided
  • 1/4 tsp salt
  • 3/4 c (3 oz) shredded extra-sharp cheddar cheese
  •  Vegetable cooking spray
  • 2 tbsps chilled stick margarine, cut into small pieces

Directions
  • Step #1 Combine flour, baking powder, salt, & 1/4 tsp pepper in a bowl; cut in margarine with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #2 Add cheese; toss well.
  • Step #3 Add milk, stirring just until dry ingredients are moistened.
  • Step #4 Turn dough out onto a well-floured surface, & knead 4 or 5 times.
  • Step #5 Roll dough to 1/2-inch thickness; cut with a 2-inch decorative cookie cutter.
  • Step #6 Place biscuits 1 inch apart on baking sheets coated with cooking spray, & brush with egg white; sprinkle with remaining pepper.
  • Step #7 Bake at 425° for 15 mins or until lightly browned.
