Mussels With Leeks, Fennel, And Tomatoes Recipe

Ingredients
  • 1/4 tsp black pepper
  • 2 lbs mussels
  • 3/4 c thinly sliced leek
  • 3 c Lobster Stock
  • 1/3 c dry white wine
  • 2/3 c finely sliced shallots
  • 1 1/2 tsps sliced fresh chives
  • 3/4 c thinly sliced fennel bulb
  • 1/2 c sliced seeded tomato

Directions
  • Step #1 Simmer first 6 ingredients in a Dutch oven over high heat.
  • Step #2 Add mussels; cover, reduce heat, & cook 4 mins or until shells open.
  • Step #3 Remove from heat; discard any unopened shells.
  • Step #4 Divide mussels & broth evenly between 2 shallow bowls.
  • Step #5 Sprinkle top with tomato & chives.
