Roasted Red Bell Pepper Spread Recipe

Ingredients
  • 1 c grated Parmesan cheese
  • 1/4 c walnut pieces, finely sliced
  •  Garnish: fresh fennel sprigs
  • 1/4 tsp pepper
  • 2 tbsps olive oil, divided
  • 2 garlic cloves, minced
  • 1 (8-oz) package fresh mushrooms, sliced
  • 4 large red bell peppers
  • 2 tbsps minced fresh or 2 tsps dried basil
  • 1/4 c sliced purple onion
  • 1 tsp Worcestershire sauce
  • 2 tsps lemon juice
  • 1/2 c Italian-seasoned breadcrumbs
  • 1/4 tsp hot sauce
  • 1/4 tsp salt

Directions
  • Step #1 Place bell peppers on an aluminum foil wrap-lined baking sheet.
  • Step #2 Broil 5 inches from heat (with electric oven door partially open) 5 to 10 mins on each side or until bell peppers look blistered.
  • Step #3 Place bell peppers in a heavy-duty zip-top plastic bag; seal & let this stand 10 mins to loosen skins.
  • Step #4 Peel bell peppers; remove & discard seeds.
  • Step #5 Sauté sliced mushrooms, sliced purple onion, & garlic in 1 1/2 tsps hot oil In a large-ish skillet 10 mins or until liquid has evaporated.
  • Step #6 Remove mixture from heat, & set aside.
  • Step #7 Process bell peppers in a food processor/blender until smooth, stopping to scrape down sides.
  • Step #8 Add mushroom mixture, Parmesan cheese, remaining 1 1/2 tbsps oil, & next 8 ingredients; pulse until ground.
  • Step #9 Serve with breadsticks, crackers, or assorted fresh vegetables.
  • Step #10 Garnish, if desired.
