Armadillo Eggs Recipe

Ingredients
  • 24 jalapeño peppers with stems
  • 1/2 (5.5-oz) package seasoned coating mix for chicken
  • 3/4 lb ground pork sausage

Directions
  • Step #1 Cut peppers in half lengthwise; remove & discard seeds.
  • Step #2 Press about 1 1/2 tsps pork sausage into pepper halves; dip stuffed sides in coating mix.
  • Step #3 Place, stuffed sides up, on a lightly greased baking sheet.
  • Step #4 Bake at 350° for 25 mins.
