Stuffed Red Peppers With Cheesy Polenta And Green Chiles Recipe

Ingredients
  • 1/4 tsp freshly ground pepper
  • 1/2 c (2 oz) freshly grated Parmesan cheese
  • 3 medium-size red bell peppers
  • 1/2 tsp garlic salt
  • 1 tsp salt
  • 2 c water
  • 2 c (8 oz) shredded Monterey Jack cheese
  • 3/4 c polenta or yellow cornmeal
  • 3 garlic cloves, minced
  •  Garnish: fresh cilantro sprigs
  • 1 (7-oz) can whole green chiles, drained & sliced
  • 1/2 c whipping cream
  • 2/3 c sliced cilantro

Directions
  • Step #1 Cut bell peppers in half; remove & discard seeds & membranes.
  • Step #2 Place bell pepper c in a lightly greased 13- x 9-inch baking dish.
  • Step #3 Whisk together polenta & next 5 ingredients In a large-ish saucepan over med-heat/flame; bring to a boil.
  • Step #4 Cook, whisking constantly, 5 to 7 mins or until polenta thickens.
  • Step #5 Stir in cream & next 4 ingredients, mixing well.
  • Step #6 Spoon mixture into pepper c.
  • Step #7 Bake at 400°for 25 to 30 mins or until peppers are tender.
  • Step #8 Garnish, if desired.
