Mini Prime Ribs And Yorkshire Puddings Recipe

Ingredients
  • 1 tsp salt
  •  Garnish: sliced green onions
  • 1 c all-purpose flour
  • 3 large eggs, lightly beaten
  • 1 tsp pepper
  • 1 (4- to 6-lb) bone-in Prime rib roast
  • 1 c milk
  •  Horseradish sauce or prepared horseradish*

Directions
  • Step #1 Stir together eggs, flour, & milk; cover & chill batter 8 hrs.
  • Step #2 Sprinkle top roast with salt & pepper.
  • Step #3 Place roast on a foil wrap-lined rack in a roasting pan.
  • Step #4 Bake at 500° for 30 mins.
  • Step #5 Reduce temperature to 350°, & bake 30 mins.
  • Step #6 Increase temperature to 450°; bake 35 more mins or to desired degree of doneness.
  • Step #7 Remove roast, & let this stand 15 mins before thinly slicing, reserving about 1/2 c drippings in pan.
  • Step #8 Spoon drippings into miniature muffin pan c, filling one-fourth full.
  • Step #9 Bake at 450° for 2 mins or until thoroughly heated.
  • Step #10 Stir chilled batter; spoon into miniature muffin pans, filling half full.
  • Step #11 Bake at 450° for 9 mins or until puffy & golden.
  • Step #12 Remove from oven, & make a well in center of pudding.
  • Step #13 Arrange Prime rib slices in centers; top this with horseradish sauce or horseradish.
  • Step #14 Garnish, if desired.
  • Step #15 Serve warm.
  • Step #16 *1/2 c sour cream, 2 tbsps lemon juice, 1 tbsp prepared horseradish, & 1/4 tsp salt mixd may be substituted for horseradish sauce.
  • Step #17 Note: Freeze Yorkshire Puddings, if desired.
  • Step #18 Let thaw at about room temp 30 mins; reheat at 400° for 5 to 7 mins.
  • Step #19 Assemble as directed.
