Butter Lettuce And Herb Salad Recipe

Ingredients
  • 1 large fennel bulb, halved, cored, & very thinly sliced
  • 3 heads butter or Boston lettuce, torn into pieces
  •  Shaved Pecorino Romano (optional)
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tsps Dijon mustard
  • 7 tbsps extra-virgin olive oil
  • 3 tbsps fresh lemon juice
  • 4 scallions, white & green parts, sliced
  • 1/4 c fresh tarragon leaves, torn into pieces

Directions
  • Step #1 Place the fennel, lettuce, tarragon, & scallions In a large-ish bowl.
  • Step #2 Whisk together the lemon juice, salt, mustard, & pepper in a small bowl.
  • Step #3 Whisking constantly, slowly add the oil.
  • Step #4 Pour the vinaigrette over the salad & toss.
  • Step #5 Top with the Pecorino (if using).
  • Step #6 In Advance: Assemble the greens & make the vinaigrette.
  • Step #7 Refrigerate them separately for up to several hrs.
  • Step #8 Combine just before serving.
