Dungeness Crab Cakes With Orange Butter Sauce Recipe

Ingredients
  • 1/2 tsp salt
  • 1 large egg, lightly beaten
  •  Orange Butter Sauce
  • 1 1/2 tbsps finely sliced green onions
  • 1 1/2 tbsps finely sliced sweet red pepper
  • 1/4 tsp freshly ground pepper
  • 1/2 c mayonnaise
  • 1 1/2 tbsps finely sliced pickled ginger
  • 1/2 c vegetable oil
  • 1 lb fresh Dungeness crabmeat
  • 2 c panko (Japanese bread crumbs)*
  • 2 slices white bread
  •  Garnishes: shredded fresh spinach, julienned sweet red pepper, grated orange zest
  • 1/4 c milk

Directions
  • Step #1 Pour milk over bread in a small bowl.
  • Step #2 Stir together crabmeat & next 7 ingredients in a medium bowl.
  • Step #3 Squeeze milk from bread, discarding excess milk.
  • Step #4 Add bread to crabmeat mixture, & toss carefully.
  • Step #5 Shape mixture into 8 patties; dredge in panko.
  • Step #6 Press extra panko onto each cake.
  • Step #7 Cover up & chill at least 2 hrs or overnight.
  • Step #8 Heat 1/4 c oil In a large-ish skillet over medium-high heat until hot; add 4 patties, & fry 3 to 4 mins on each side or until golden.
  • Step #9 Repeat procedure with remaining oil & patties.
  • Step #10 Place crab cakes on a large baking sheet.
  • Step #11 Bake at 425° for 5 mins.
  • Step #12 Spoon Orange Butter Sauce evenly onto serving plates.
  • Step #13 Place crab cakes over sauce.
  • Step #14 Garnish, if desired.
  • Step #15 * Panko (coarse breadcrumbs) can be found in Asian Markets.
  • Step #16 Fresh lump crabmeat may be substituted for Dugeness crabmeat.
