Middle Eastern Eggplant Dip Recipe

Ingredients
  • 1 tbsp tomato paste
  • 4 1/2 c (1-inch) cubed peeled eggplant (about 1 1/4 lbs)
  • 1 tbsp olive oil
  • 1 c sliced red onion
  • 1 garlic clove, sliced
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp salt
  •  Cooking spray
  • 1 c sliced red bell pepper

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine first 5 ingredients in a 13 x 9-inch baking dish coated with cooking spray; stir well to coat.
  • Step #3 Bake at 350° for 1 hr or until vegetables are tender.
  • Step #4 Cool slightly.
  • Step #5 Place vegetables & remaining ingredients in a food processor/blender; process until smooth.
