Christmas Sandwich Cremes Recipe

Ingredients
  • Food coloring
  • 2 tsps vanilla extract
  • 1/3 c whipping cream
  • 1/2 c butter (no substitutes), softened
  • FILLING:
  • 1 1/2 c confectioners' sugar
  • 1 c butter (no substitutes), softened
  • 2 c all-purpose flour
  • sugar

Directions
  • Step #1 In a mixing bowl, mix butter, cream & flour; mix well.
  • Step #2 Cover & put in the fridge for 2 hrs or until dough is easy to handle.
  • Step #3 Divide into thirds; let one portion stand at about room temp for 15 mins (keep remaining dough put in the fridged until ready to roll out).
  • Step #4 On a floured surface, roll out dough to 1/8-in.
  • Step #5 thickness.
  • Step #6 Cut with a 1-1/2-in.
  • Step #7 round cookie cutter.
  • Step #8 Place cutouts in a shallow dish filled with sugar; turn to coat.
  • Step #9 Place on ungreased baking sheets.
  • Step #10 Prick with a fork several times.
  • Step #11 Bake at 375 degrees F for 7-9 mins or until set.
  • Step #12 Cool on wire racks.
  • Step #13 For filling, in a mixing bowl, cream butter & sugar.
  • Step #14 Add vanilla.
  • Step #15 Tint with food coloring.
  • Step #16 Spread about 1 tsp of filling over half of the cookies; top this with remaining cookies.
