Charleston Harbor Pickled Shrimp Recipe

Ingredients
  • 1 red bell pepper, cut into thin strips
  • 1/2 c white vinegar
  • 1 1/2 c water
  • 2 quarts water
  • 1 green bell pepper, cut into thin strips
  • 1 small onion,cut in half & sliced
  • 1 tbsp salt
  • 1 lb unpeeled, medium-size fresh shrimp
  • 3 tbsps Creole seasoning

Directions
  • Step #1 Bring 2 quarts water to a boil in a Dutch oven; add shrimp & Creole seasoning, & boil 2 mins or just until shrimp turn pink; drain.
  • Step #2 Peel shrimp, & devein, if desired.
  • Step #3 Place shrimp in a bowl or jar.
  • Step #4 Top with onion & peppers.
  • Step #5 Stir together 1 1/2 c water, vinegar, & salt; pour over peppers.
  • Step #6 Cover up & chill 8 hrs.
  • Step #7 Drain before serving.
