Coconut Shrimp With Mustard Sauce Recipe

Ingredients
  • 1/2 tsp salt
  • 1 1/2 lbs unpeeled, jumbo fresh shrimp
  • 2 c all-purpose baking mix, divided
  • 1 c beer
  •  Mustard Sauce
  • 3 c sweetened flaked coconut
  • 1/8 to 1/4 tsp ground red pepper
  •  Vegetable oil

Directions
  • Step #1 Peel shrimp, leaving tails intact; devein, if desired.
  • Step #2 Set aside.
  • Step #3 Stir together 1 c baking mix & 1 c beer until smooth.
  • Step #4 Stir together remaining 1 c baking mix, salt, & ground red pepper.
  • Step #5 Dredge shrimp in dry mixture, & dip in beer mixture, allowing excess coating to drip.
  • Step #6 Gently roll shrimp in flaked coconut.
  • Step #7 Pour vegetable oil to a depth of 3 inches into a Dutch oven or heavy saucepan, & heat to 350°.
  • Step #8 Cook shrimp, in batches, 1 to 2 mins or until golden; remove shrimp, & drain on paper towels.
  • Step #9 Serve as soon as possible with Mustard Sauce.
