Hummus With Raspberry Vinegar Recipe

Ingredients
  •  Cilantro sprigs (optional)
  • 1 (15 1/2-oz) can chickpeas (garbanzo beans), undrained
  • 1 tbsp sliced fresh cilantro
  • 1/2 tsp coarsely ground black pepper
  • 1/2 tsp ground cumin
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1 1/2 c sliced onion
  • 2 tbsps raspberry vinegar

Directions
  • Step #1 Heat oil in a nonstick skillet over medium-high heat.
  • Step #2 Add onion, & saute 5 mins or until onion begins to brown.
  • Step #3 Add vinegar, & bring to a boil, & cook 2 mins or until vinegar evaporates.
  • Step #4 Cool to about room temp.
  • Step #5 Drain chickpeas through a sieve over a bowl, reserving 1/4 c liquid.
  • Step #6 Place chickpeas & sliced cilantro in a food processor/blender, & process until mixture resembles coarse meal.
  • Step #7 Add onion mixture, 1/4 c reserved liquid, cumin, pepper, & salt, & process until smooth.
  • Step #8 Garnish with cilantro sprigs, if desired.
