Cherry Meringue Dessert Recipe

Ingredients
  • 2 c sugar
  • 2 c crushed saltine crackers
  • 3/4 tsp cream of tartar
  • 1 (20 oz) can reduced-sugar cherry pie filling
  • 6 egg whites
  • 1 (8 oz) container frozen reduced-fat frozen whipped topping, thawed
  • 2 tsps vanilla extract
  • 1/2 c sliced pecans

Directions
  • Step #1 In a large mixing bowl, beat the egg whites until foamy.
  • Step #2 Add cream of tartar & vanilla; beat until soft peaks form.
  • Step #3 Gradually beat in sugar, 1 tbsp at a time, until stiff glossy peaks form.
  • Step #4 Fold in saltines & pecans.
  • Step #5 Transfer to a 13-in.
  • Step #6 x 9-in.
  • Step #7 x 2-in.
  • Step #8 baking dish coated with nonstick cooking spray.
  • Step #9 Bake at 350 degrees F for 20-25 mins or until lightly browned & edges begin to crack.
  • Step #10 Cool on a wire rack.
  • Step #11 Spread whipped topping over crust.
  • Step #12 Carefully spoon pie filling over top.
