Mexican Meatballs Recipe

Ingredients
  • 1/2 c dry bread crumbs
  • 2 tsps kosher salt
  • 1 jalapeño, seeded & finely sliced
  • 1 large egg
  • 1 medium yellow onion, finely sliced
  • 1 lb ground pork
  • 1/4 tsp black pepper
  • 2 tbsps olive oil
  • 1 16-oz jar salsa
  • 2 cloves garlic, finely sliced
  • 1 tsp ground cumin

Directions
  • Step #1 Heat oven to 400° F.
  • Step #2 Heat 1 tbsp of the oil In a large-ish, preferably ovenproof skillet over med-heat/flame.
  • Step #3 Add the onion & cook this until softened, about 3 mins.
  • Step #4 Add the garlic & jalapeño & cook for 1 min.
  • Step #5 Remove from heat; let cool.
  • Step #6 In a large bowl, salt, mix the pork, cumin, egg, bread crumbs, pepper, & onion mixture.
  • Step #7 Shape into 12 meatballs.
  • Step #8 Wipe out skillet, add the remaining oil, & heat over medium-high heat.
  • Step #9 Brown the meatballs on all sides, about 7 mins total.
  • Step #10 If not using an ovenproof skillet, transfer the meatballs to a baking dish.
  • Step #11 Pour the salsa over the top.
  • Step #12 Bake until cooked through, about 25 mins.
  • Step #13 Tip: If you're in the mood for soft tacos, set out corn or flour tortillas & shredded cheese with the meatballs.
  • Step #14 Otherwise simply serve them over rice.
