Curried Crab Cakes Recipe

Ingredients
  • 1/2 tsp salt
  • 1/8 tsp ground red pepper
  • 2 tsps curry powder
  • 1 c sliced red bell pepper
  • 2 tsps minced peeled ginger
  •  Cooking spray
  • 1 c minced onion
  • 1 tsp grated lemon rind
  • 1/2 c sliced celery
  • 1/4 tsp black pepper
  • 2 tbsps butter, divided
  • 1/4 tsp dry mustard
  •  Parsley sprigs (optional)
  • 1 1/4 c dry breadcrumbs, divided
  • 1 lb lump crabmeat, shell pieces removed
  • 1 garlic clove, minced
  • 1 large egg, lightly beaten
  • 1/4 c light mayonnaise

Directions
  • Step #1 Combine first 5 ingredients in a small bowl; stir well.
  • Step #2 Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Step #3 Add the onion, reduce heat to medium-low, & celery; cover, & cook for 10 mins, bell pepper, stirring every once in awhile.
  • Step #4 Add the curry powder mixture, 5 mins, uncovered, & garlic; cook, ginger, stirring frequently.
  • Step #5 Spoon mixture into a large bowl; cool.
  • Step #6 Wipe skillet clean with a paper towel.
  • Step #7 Add 3/4 c breadcrumbs, crabmeat, rind, mayonnaise, & egg to onion mixture; stir well.
  • Step #8 Divide crabmeat mixture into 24 equal portions, shaping each into a 1/2-inch-thick patty.
  • Step #9 Place remaining breadcrumbs in a shallow dish; dredge crab cakes in breadcrumbs.
  • Step #10 Melt 2 tsps butter in pan over med-heat/flame.
  • Step #11 Add 8 patties, & cook 2 mins on each side or until browned.
  • Step #12 Remove the crab cakes from pan, & keep warm.
  • Step #13 Repeat procedure with remaining butter & patties.
  • Step #14 Garnish with parsley sprigs, if desired.
