Ingredients
1/2 tsp salt
1/8 tsp ground red pepper
2 tsps curry powder
1 c sliced red bell pepper
2 tsps minced peeled ginger
Cooking spray
1 c minced onion
1 tsp grated lemon rind
1/2 c sliced celery
1/4 tsp black pepper
2 tbsps butter, divided
1/4 tsp dry mustard
Parsley sprigs (optional)
1 1/4 c dry breadcrumbs, divided
1 lb lump crabmeat, shell pieces removed
1 garlic clove, minced
1 large egg, lightly beaten
1/4 c light mayonnaise
Directions
Step #1 Combine first 5 ingredients in a small bowl; stir well.
Step #2 Heat a large nonstick skillet coated with cooking spray over medium-high heat.
Step #3 Add the onion, reduce heat to medium-low, & celery; cover, & cook for 10 mins, bell pepper, stirring every once in awhile.
Step #4 Add the curry powder mixture, 5 mins, uncovered, & garlic; cook, ginger, stirring frequently.
Step #5 Spoon mixture into a large bowl; cool.
Step #6 Wipe skillet clean with a paper towel.
Step #7 Add 3/4 c breadcrumbs, crabmeat, rind, mayonnaise, & egg to onion mixture; stir well.
Step #8 Divide crabmeat mixture into 24 equal portions, shaping each into a 1/2-inch-thick patty.
Step #9 Place remaining breadcrumbs in a shallow dish; dredge crab cakes in breadcrumbs.
Step #10 Melt 2 tsps butter in pan over med-heat/flame.
Step #11 Add 8 patties, & cook 2 mins on each side or until browned.
Step #12 Remove the crab cakes from pan, & keep warm.
Step #13 Repeat procedure with remaining butter & patties.
Step #14 Garnish with parsley sprigs, if desired.
