  • Step #1 In a bowl, 1 tbsp fresh thyme leaves (or 2 tsps dried thyme), 2 tbsps white wine vinegar, 1 tbsp Dijon mustard, whisk together 3 tbsps mayonnaise, & 1/4 tsp fresh-ground pepper.
  • Step #2 Add 3 c shredded cold cooked chicken, 3/4 c sliced watercress or Italian parsley, & 2 tbsps sliced shallots.
  • Step #3 Stir in salt to taste.
  • Step #4 Serve with toasted baguette slices.
