Chocolate Almond Freezer Cookies Recipe

Ingredients
  • 1 c white sugar
  • 1/2 c apricot preserves
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 4 (1 oz) squares milk chocolate, sliced
  • 1 egg
  • 3/4 c finely sliced blanched almonds
  • 1 3/4 c unbleached all-purpose flour
  • 1/2 c unsalted butter
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/3 c unsweetened cocoa powder

Directions
  • Step #1 In a medium bowl, mix the almonds & the milk chocolate.
  • Step #2 Add half of the sugar, & mix well.
  • Step #3 Set aside.
  • Step #4 In a large bowl, beat the butter until soft.
  • Step #5 Stir in the vanilla & remaining sugar until well mixed.
  • Step #6 Mix in the egg & apricot preserves.
  • Step #7 Sift together the flour, baking soda, baking powder, salt & cocoa powder.
  • Step #8 Stir into the egg mixture.
  • Step #9 Add the chocolate & nut mixture & stir until well mixed.
  • Step #10 Mixture will be stiff.
  • Step #11 Spread two lengths of plastic wrap about 12 inches long on a counter.
  • Step #12 Spoon half of the dough down each length of the wrap, forming strips 8 to 9 inches long.
  • Step #13 Bring the two long sides of the wrap together on top of one of the strips of dough.
  • Step #14 Press together close to the dough & smooth into a strip about 9 inches long, 3 inches wide & 1 inch high.
  • Step #15 Repeat with second strip.
  • Step #16 Freeze for at least 1 1/2 hrs, or as long as you'd like.
  • Step #17 Preheat oven to 350 degrees F (175 degrees C).
  • Step #18 Line a cookie sheet with aluminum foil or baking parchment.
  • Step #19 Unwrap the frozen dough & cut 1/4 inch thick slices.
  • Step #20 Place on cookie sheets 2 inches apart.
  • Step #21 Bake for about 11 mins.
  • Step #22 Let cool on wire racks.
