Sausage-egg Soft Tacos Recipe

Ingredients
  • 1/2 tsp salt
  • 8 large eggs
  • 1 tbsp butter
  • 1/2 tsp pepper
  • 6 (8-inch) flour tortillas
  • 1 seeded & sliced jalapeño pepper
  • 1 (3-oz) package cream cheese, cut into cubes
  •  Sour cream
  • 1 (16-oz) package cooked, drained, & crumbled ground pork sausage
  • 1/2 c shredded colby-Jack cheese
  • 1 1/2 c shredded colby-Jack cheese
  •  Salsa
  • 1/4 c milk

Directions
  • Step #1 Whisk together first 4 ingredients.
  • Step #2 Melt butter In a large-ish nonstick skillet over med-heat/flame; add egg mixture, & cook, without stirring, until eggs begin to set on bottom.
  • Step #3 Sprinkle top cream cheese cubes evenly over egg mixture; draw a spatula across bottom of skillet to form large curds.
  • Step #4 Cook until eggs are thickened but still moist.
  • Step #5 (Do not stir constantly.
  • Step #6 ) Remove from heat.
  • Step #7 Stir in sliced jalapeño pepper before serving.
  • Step #8 Sprinkle top tortillas evenly with 1 1/2 c shredded colby-Jack cheese.
  • Step #9 Top one half of each tortilla evenly with scrambled eggs & sausage.
  • Step #10 Sprinkle top evenly with 1/2 c shredded colby-Jack cheese.
  • Step #11 Fold tortillas over filling.
  • Step #12 Serve with sour cream & salsa.
  • Step #13 Note: To lighten, substitute 2 c egg substitute for eggs & 3 oz light cream cheese for 3 oz regular cream cheese.
  • Step #14 Proceed as directed.
