Open-faced Panini With Goat Cheese, Roasted Peppers, And Spicy Olive Topping Recipe

Ingredients
  • 6 (1-inch) slices Italian bread
  • 3 tbsps crumbled goat cheese
  • 2 red bell peppers
  • 1/8 tsp salt
  • 1/8 tsp ground red pepper
  • 2 tsps grated lemon rind
  • 1 small garlic clove, minced
  • 1 tbsp minced fresh basil
  • 2 tbsps minced pitted green olives (about 8)
  • 1/4 c minced pitted ripe olives (about 6)
  • 2 tsps fresh lemon juice

Directions
  • Step #1 Prepare broiler.
  • Step #2 Cut bell peppers in half lengthwise; discard seeds & membranes.
  • Step #3 Place pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
  • Step #4 Broil 15 mins or until blackened.
  • Step #5 Place in a zip-top plastic bag; seal.
  • Step #6 Let stand for 10 mins.
  • Step #7 Peel & cut into strips.
  • Step #8 Combine peppers & salt in a medium bowl; set aside.
  • Step #9 Place bread on a baking sheet; broil 1 min on each side or until toasted.
  • Step #10 Combine ripe olives & the next 6 ingredients (through garlic) in a small bowl.
  • Step #11 Spoon about 1 tbsp olive mixture onto each toast slice; top evenly with pepper strips, & sprinkle each serving with 1 1/2 tsps crumbled goat cheese.
  • Step #12 Cut each panino in half.
  • Step #13 Serve as soon as possible.
