Garlic-marinated Carrots Recipe

Ingredients
  • 4 garlic cloves, thinly sliced or crushed
  • 1/4 tsp pepper
  • 2 tbsps white wine vinegar
  • 5 c coarsely shredded carrot (about 1 1/2 lbs)
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1 bay leaf

Directions
  • Step #1 Combine first 4 ingredients In a large-ish bowl; stir well with a wire whisk.
  • Step #2 Add remaining ingredients; toss well to coat.
  • Step #3 Cover up & chill at least 8 hrs.
  • Step #4 Discard bay leaf before serving.
