Baby Elephant Ears Procençale Recipe

Ingredients
  • 1 (17 1/4-oz) package frozen puff pastry, thawed
  • 1 tbsp minced fresh parsley
  • 1/4 c olive oil, divided
  • 2 tbsps sliced dried tomatoes
  • 2 tbsps sliced ripe olives
  • 1 egg yolk
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 3 tbsps minced onion

Directions
  • Step #1 Roll 1 pastry sheet into a 13- x 11-inch rectangle.
  • Step #2 Stir together olive oil, garlic, & salt.
  • Step #3 Brush half of olive oil mixture over pastry.
  • Step #4 Sprinkle top with half of ripe olives, dried tomatoes, & minced parsley.
  • Step #5 Roll up pastry, jellyroll fashion, starting with each short side & ending at middle of pastry sheet.
  • Step #6 Repeat procedure with remaining pastry sheet, olive oil mixture, olives, tomatoes & parsley.
  • Step #7 Cut rolls croswise into 1/3-inch-thick slices.
  • Step #8 Place on lightly greased baking sheets.
  • Step #9 Whisk together egg yolk & 1 tbsp water, & brush evenly over pastries.
  • Step #10 Bake at 375º for 10 to 15 mins or until golden brown.
