Chicken Cream Recipe

Ingredients
  • 4 c heavy cream
  • 1 tsp ground black pepper
  • 3 tbsps vegetable oil
  • 1 quart fresh orange juice
  • 1 tsp salt
  • 1/3 c white wine
  • 1/2 c all-purpose flour for coating
  • 4 skinless, boneless chicken breast halves

Directions
  • Step #1 Poke each breast with a fork a few times.
  • Step #2 Spice up with salt & pepper.
  • Step #3 Dredge in flour.
  • Step #4 In a large saute pan, brown meat on both sides in oil.
  • Step #5 Drain off excess oil.
  • Step #6 Splash with white wine, & let reduce.
  • Step #7 Add orange juice to cover the bottom of the pan.
  • Step #8 Bring to a boil, turning the breasts often.
  • Step #9 When at a boil, add whipping cream, just to cover.
  • Step #10 Turn heat down to a simmer.
  • Step #11 Reduce the liquid by half.
  • Step #12 Place each breast on a bed of rice or toast tips, if desired; garnish with mint leaf & orange slice.
