Grilled Zucchini-wrapped Shrimp Recipe

Ingredients
  •  Fresh cilantro sprigs (optional)
  • 2 large zucchini
  • 1 lb unpeeled, large fresh shrimp
  • 1/2 tsp ground red pepper
  • 3/4 tsp salt
  • 8 tbsps vegetable oil, divided
  • 1/2 c fresh lime juice
  • 2 garlic cloves, pressed

Directions
  • Step #1 Peel shrimp; devein, if desired.
  • Step #2 Combine lime juice, & next 3 ingredients in a heavy-duty zip-top plastic bag, 3 tbsps vegetable oil, carefully squeezing to mix; add shrimp.
  • Step #3 Seal & chill mixture 15 mins.
  • Step #4 Remove shrimp from marinade, reserving marinade.
  • Step #5 Bring reserved marinade to a boil in a small saucepan; remove this from heat.
  • Step #6 Cut zucchini lengthwise into thin slices with a vegetable peeler.
  • Step #7 Wrap each shrimp with a zucchini slice, & secure with a wooden pick.
  • Step #8 Brush rolls with remaining 5 tbsps vegetable oil.
  • Step #9 Grill rolls, without grill lid, over medium-high heat (350° to 400°) about 4 mins.
  • Step #10 Brush with reserved marinade; turn & brush again.
  • Step #11 Grill 2 more mins or just until shrimp turn pink.
  • Step #12 Serve hot or at about room temp on a cilantro-lined platter, if desired.
