Broiled Shrimp With Spicy Chile Sauce Barra Vieja Recipe

Ingredients
  • 1 tbsp minced fresh cilantro
  • 2/3 c sliced onion
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1 tbsp white vinegar
  • 1 tsp chili powder
  •  Cooking spray
  • 1/2 tsp dried marjoram
  • 24 large cherry tomatoes
  • 3 garlic cloves, minced
  • 1/4 tsp salt
  • 1 c boiling water
  • 1 tbsp fresh lime juice
  • 3 ancho chiles
  • 1/2 tsp dried oregano
  • 2 tbsps molasses
  •  Dash of saffron powder
  • 6 dried New Mexico chiles
  • 18 jumbo shrimp (about 1 lb)
  • 1 (8-oz) carton plain fat-free yogurt
  • 4 plum tomatoes, quartered (about 1 lb)
  • 2 c trimmed watercress (about 1 bunch)
  • 1/8 tsp ground cloves

Directions
  • Step #1 Cut a lengthwise slit in each chile; discard seeds & stems.
  • Step #2 Combine chiles & boiling water.
  • Step #3 Cover up & let this stand 10 mins.
  • Step #4 Drain chiles through a fine sieve over a bowl, reserving 1/2 c soaking liquid.
  • Step #5 Place chiles, onion, & next 9 ingredients (onion through garlic) in a food processor/blender; process until smooth.
  • Step #6 Combine chile mixture & reserved soaking liquid in a small saucepan.
  • Step #7 Bring to a boil; reduce heat, & let simmer 15 mins.
  • Step #8 Spoon yogurt onto several layers of heavy-duty paper towels; spread to 1/2-inch thickness.
  • Step #9 Cover up with extra paper towels; let this stand 5 mins.
  • Step #10 Scrape into a bowl using a rubber spatula.
  • Step #11 Add juice, 1/4 tsp salt, & saffron; stir well.
  • Step #12 Cover up & put in the fridge.
  • Step #13 Place tomatoes in a nonstick skillet over medium-high heat.
  • Step #14 Sauté 10 mins or until lightly browned, & cool.
  • Step #15 Cut a slit in each tomato; mash carefully.
  • Step #16 Discard seeds.
  • Step #17 Preheat broiler.
  • Step #18 Peel shrimp, leaving the tails intact.
  • Step #19 Starting at tail end, cutting to, but not through, butterfly each shrimp, underside of shrimp.
  • Step #20 Brush shrimp with about 1/2 c chile mixture; arrange shrimp on a broilerpan coated with cooking spray.
  • Step #21 Broil 6 mins or until shrimp are done.
  • Step #22 Place 1/2 c yogurt mixture in a small heavy-duty zip-top plastic bag, & seal.
  • Step #23 Snip a tiny hole in 1 corner of bag; drizzle yogurt mixture over each of 6 plates.
  • Step #24 Arrange 1/3 c watercress evenly over yogurt.
  • Step #25 Top with 3 shrimp & 4 tomatoes.
  • Step #26 Sprinkle top with cilantro & chili powder.
