Barbecued Oysters With Pickled Ginger Mignonette Sauce Recipe

Ingredients
  • 1 to 2 tsps minced pickled ginger
  • 1/2 c rice wine vinegar
  • 36 fresh oysters, unshucked
  • 1 1/2 tbsps minced shallots
  • 1/4 c fresh lime juice
  • 1 tsp freshly ground pepper
  • 1 tsp soy sauce

Directions
  • Step #1 Whisk together rice wine vinegar through soy sauce in a small bowl.
  • Step #2 Set aside.
  • Step #3 Scrub oysters with a stiff brush under running water.
  • Step #4 Insert an oyster knife into the hinged edge of each oyster; twist knife handle back & forth until top shell is loose.
  • Step #5 Slide oyster knife along the bottom of the top shell to detach muscle.
  • Step #6 Remove & discard top shell, keeping the oyster in the deeper bottom shell.
  • Step #7 Spoon about 1 tsp sauce over each oyster.
  • Step #8 Grill, without grill lid, over high heat (400° to 500°) 1 to 2 mins or until sauce boils.
  • Step #9 Remove oysters from grill with tongs, being careful not to spill sauce.
  • Step #10 Serve as soon as possible.
