Tomatoes With Sicilian White Bean Purée Recipe

Ingredients
  • 1 clove garlic, peeled & minced
  • 2 tbsps mayonnaise
  • 1 tbsp minced green onion (including green top)
  • 1 tbsp lemon juice
  • 1 tbsp drained capers
  • 1 can (15 oz.) cannellini (white) beans, rinsed, drained, & mashed (see note above)
  • 3 tbsps sliced fresh basil leaves
  • 2 tbsps pine nuts
  •  Salt & pepper
  • 2 tbsps grated parmesan cheese
  • 3 firm-ripe tomatoes (about 1 3/4 lbs. total), rinsed, cored, & sliced crosswise 1/4 inch thick
  • 1 tbsp dried currants

Directions
  • Step #1 In a 6- to 8-inch frying pan over med-heat/flame, stir pine nuts often until golden, 5 to 10 mins.
  • Step #2 In a bowl, currants, lemon juice, parmesan, mayonnaise, mix mashed beans, green onion, capers, basil, & garlic until well mixed.
  • Step #3 Add salt & pepper to taste.
  • Step #4 Arrange tomato slices, overlapping, on a platter.
  • Step #5 Spoon bean mixture down the center of tomatoes.
  • Step #6 Sprinkle top with pine nuts.
