Stuffed Mushrooms Recipe

Ingredients
  • 3 tbsps grated fresh Parmesan cheese
  • 1/2 tsp paprika
  •  Cooking spray
  • 2 tsps Worcestershire sauce
  • 1 tbsp butter
  • 24 button mushroom caps
  • 1/2 c finely sliced onion
  • 1/3 c Italian-seasoned breadcrumbs
  • 1/2 c finely sliced green bell pepper
  • 2/3 c fat-free cottage cheese
  • 2 garlic cloves, minced

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Melt butter in a nonstick skillet over medium-high heat.
  • Step #3 Add onion, bell pepper, & garlic; sauté 5 mins or until tender.
  • Step #4 Stir in cottage cheese & Worcestershire sauce, stirring until cheese melts.
  • Step #5 Remove from heat; stir in the breadcrumbs.
  • Step #6 (Mixture will be thick.
  • Step #7 ) Spoon mixture evenly into mushroom caps.
  • Step #8 Place the mushroom caps in an 11 x 7-inch baking dish coated with cooking spray.
  • Step #9 Sprinkle top mushrooms evenly with paprika.
  • Step #10 Bake at 350° for 20 mins or until tender.
  • Step #11 Sprinkle top with Parmesan cheese.
