Chicken Sate With Ponzu Sauce Recipe

Ingredients
  • 1/4 tsp crushed red pepper
  • 4 (6-oz) skinless, boneless chicken breast halves
  • 1/4 c rice vinegar
  • 1 tsp dark sesame oil
  • 1/4 c fresh lime juice
  • 2 tsps low-sodium soy sauce
  • 1 garlic clove, minced
  • 1/4 c sake (rice wine)
  •  Cooking spray
  • 1/4 c packed light brown sugar

Directions
  • Step #1 Prepare grill.
  • Step #2 Cut each chicken breast half lengthwise into 4 strips.
  • Step #3 Combine sugar & remaining ingredients except cooking spray in a small bowl; stir until sugar dissolves.
  • Step #4 Combine half of sake mixture & all of chicken In a large-ish bowl.
  • Step #5 Let stand 10 mins.
  • Step #6 Reserve remaining sake mixture.
  • Step #7 Drain chicken, discarding marinade.
  • Step #8 Thread 1 chicken strip onto each of 16 (8-inch) skewers.
  • Step #9 Place chicken on grill rack coated with cooking spray; grill 2 mins on each side or until done.
  • Step #10 Serve with remaining sake mixture.
  • Step #11 Wine note: This dish calls for a wine that's bold yet refreshing.
  • Step #12 Dry rosé does this admirably.
