Terry's Barbecued Ribs Recipe

Ingredients
  • 1 tbsp garlic powder
  • 1/8 tsp ground cloves
  • 1/4 c chili powder
  • 1 rack pork back ribs (2 1/4 to 2 1/2 lb), fat trimmed, cut in half lengthwise
  • 1/4 tsp black pepper
  • 2 limes, quartered
  • 3/4 tsp salt
  • 1 1/2 tsps dried oregano
  • 1 1/2 tsps dried thyme
  • 3/4 tsp hot dry mustard
  • 2 tsps ground cumin

Directions
  • Step #1 In a bowl, mustard, garlic powder, cumin, oregano, thyme, mix chili powder, salt, pepper, & cloves.
  • Step #2 Rinse ribs & pat dry.
  • Step #3 Rub ribs all over with spice mixture.
  • Step #4 Wrap airtight & chill 8 hrs or overnight.
  • Step #5 If using charcoal briquets, mound & ignite 50 briquets on the firegrate of a barbecue with a lid.
  • Step #6 When briquets are dotted with gray ash, in 15 to 20 mins, push equal amounts to opposite sides of firegrate.
  • Step #7 Set a drip pan on firegrate between coals.
  • Step #8 If using a gas barbecue, turn all burners to high & close lid for 10 mins.
  • Step #9 Adjust burners for indirect cooking (no heat down center) & lower side burners to medium heat.
  • Step #10 Lay ribs along center of the grill (not directly over heat).
  • Step #11 Cover up the barbecue (if using charcoal, open vents) & cook, until meat is browned, turning once midway through cooking time, about 15 mins.
  • Step #12 Wrap ribs in foil wrap & return to grill.
  • Step #13 Cook until meat is tender when pierced, about 30 mins longer.
  • Step #14 Transfer ribs to a platter & cut apart between bones.
  • Step #15 Garnish with lime wedges to squeeze over portions to taste.
