Crab-stuffed Peppers Recipe

Ingredients
  • 1/2 tsp hot sauce
  • 1 plum tomato, seeded & finely sliced
  • 1 tbsp minced fresh basil or parsley
  • 3 large red or green peppers
  • 1/2 c mayonnaise
  • 2 green onions, finely sliced (about 1/4 c)
  •  Fresh basil, sliced into thin strips
  • 2 tsps lemon juice
  • 1/2 lb fresh crabmeat, drained & flaked (about 2 c)

Directions
  • Step #1 Combine first 4 ingredients in a medium bowl; stir in the mayonnaise, lemon juice, & hot sauce.
  • Step #2 Cover up & chill in the fridge.
  • Step #3 Meanwhile, cut peppers into 1 1/2" strips.
  • Step #4 (For bite-size pieces, cut strips in half crosswise.
  • Step #5 ) Spoon crab filling onto pepper strips, & top this with basil strips.
  • Step #6 Make-Ahead: Cut peppers into strips & store this in heavy-duty, zip-top plastic bags.
  • Step #7 Prepare crabmeat mixture 8 hrs ahead.
  • Step #8 For a twist, top baguette slices with the crab mixture.
