Copper Carrots Recipe

Ingredients
  • Chopped fresh parsley
  • 1 tbsp butter or margarine
  • 2 tsps sugar
  • 1/4 tsp salt
  • 1/8 tsp ground ginger
  • 3 medium carrots, julienned
  • 1/2 tsp cornstarch
  • 2 tbsps orange juice

Directions
  • Step #1 In a small saucepan, cook carrots in water until tender; drain.
  • Step #2 Remove carrots; set aside & keep warm.
  • Step #3 In the same saucepan, mix sugar, cornstarch, salt & ginger.
  • Step #4 Gradually stir in the orange juice; bring to a boil.
  • Step #5 Cook & stir for 2 mins.
  • Step #6 Add butter.
  • Step #7 Return carrots to pan; heat through.
  • Step #8 Sprinkle top with parsley if desired.
  • Step #9 .
