Chutney Pizzas Recipe

Ingredients
  • 4 pocket bread rounds (6 in. wide)
  • 1/2 lb mushrooms
  • 2 to 3 tsps chutney
  • 3/4 c shredded Swiss or fontina cheese
  • 1 tbsp butter or olive oil

Directions
  • Step #1 In a food processor/blender, mince mushrooms.
  • Step #2 In a 10- to 12-inch frying pan, mix mushrooms & butter.
  • Step #3 Stir often over high heat until juices evaporate & mushrooms start to brown, 5 to 7 mins.
  • Step #4 Lay pocket bread rounds cped side up on a baking sheet & scatter the mushroom mixture equally on top of them.
  • Step #5 Sprinkle top each with about 3 tbsps cheese.
  • Step #6 Bake in a 400° oven until cheese melts & bread crisps, 5 to 7 mins.
  • Step #7 Drizzle chutney over each pizza & cut each round into quarters.
  • Step #8 Nutritional analysis per piece.
