Oysters Chesapeake Recipe

Ingredients
  •  Lemon wedges (optional)
  • 2 bacon slices, cooked & crumbled (drained)
  • 1/8 tsp freshly ground black pepper
  • 12 shucked oysters
  • 1 (1-oz) slice white bread
  • 1 (6 1/2-oz) can lump crabmeat, undrained
  • 2 tbsps reduced-fat mayonnaise
  • 1 tbsp minced chives
  • 1/8 tsp salt
  • 1 tsp butter, melted
  • 2 tbsps reduced-fat sour cream
  •  Fresh minced chives (optional)

Directions
  • Step #1 Preheat broiler.
  • Step #2 Combine first 7 ingredients in a medium bowl; stir carefully.
  • Step #3 Place bread in a food processor/blender; process until coarse crumbs measure 1/2 c.
  • Step #4 Combine breadcrumbs & butter in a small bowl.
  • Step #5 Arrange oysters on a broiler pan.
  • Step #6 Spoon about 1 tbsp crab mixture over each oyster; sprinkle each with about 1 tsp breadcrumb mixture.
  • Step #7 Broil 7 mins or until tops are browned & oysters are done.
  • Step #8 Serve with lemon wedges & garnish with chives, if desired.
