Hand-hacked Pot Stickers Recipe

Ingredients
  • 1 tbsp low-sodium soy sauce
  • 2 c fat-free, less-sodium chicken broth, divided
  • 1 tbsp canola oil, divided
  • 1/4 c minced green onions
  • 1 c sliced spinach
  • 1/4 lb peeled & deveined shrimp, sliced
  • 1/2 tsp dark sesame oil
  • 1/3 lb lean ground pork
  • 3 garlic cloves, minced
  • 1 c sliced napa (Chinese) cabbage
  • 1 tsp minced peeled fresh ginger
  •  Dash of white pepper
  • 24 round wonton wrappers or gyoza skins
  •  Green onion strips (optional)

Directions
  • Step #1 Combine first 10 ingredients in a bowl.
  • Step #2 Working with 1 wonton wrapper at a time (cover the remaining wrappers with a damp towel to prevent drying), spoon about 1 heaping tsp filling into the center of each wrapper.
  • Step #3 Moisten edges of wrapper with water.
  • Step #4 Fold in half, pinching the edges together to seal.
  • Step #5 Holding the sealed edges of the pot sticker between the thumb & first two fingers of each hand, form 3 to 4 pleats along the seal.
  • Step #6 Place dumpling, seam side up, on a platter.
  • Step #7 Repeat with remaining filling & wrappers to form 24 pot stickers.
  • Step #8 Heat 1 1/2 tsps canola oil In a large-ish nonstick skillet.
  • Step #9 Arrange 12 pot stickers, in pan, seam sides up, & cook for 30 seconds or until browned.
  • Step #10 Add 1 c of chicken broth to pan; cover & cook 5 mins.
  • Step #11 Uncover & cook about 1 min or until liquid evaporates.
  • Step #12 Remove the pot stickers from pan; cover & keep warm.
  • Step #13 Repeat procedure with the remaining 1 1/2 tsps canola oil, 12 pot stickers, & 1 c of broth.
  • Step #14 Garnish with green onion strips, if desired.
  • Step #15 Serve as soon as possible.
