Roquefort Mousse And Crudites Recipe

Ingredients
  • 1 lb fat-free cottage cheese
  • 8 celery stalks with leaves
  • 3/4 c (3 oz) crumbled Roquefort or other blue cheese
  • 1/8 tsp freshly ground black pepper

Directions
  • Step #1 Finely chop 2 tbsps celery leaves, reserving stalks.
  • Step #2 Place the celery leaves, cottage cheese, blue cheese, & pepper in a mixer or food processor/blender, & process for 1 1/2 mins or until smooth.
  • Step #3 Spoon cheese mixture into a bowl; cover & chill for 1 hr.
  • Step #4 Cut the celery stalks into sticks or as desired.
  • Step #5 Serve with mousse.
