Green Papaya-turkey Tumble Recipe

Ingredients
  • 3/4 c fat-skimmed chicken broth
  • 1 lb ground turkey or ground lean pork
  •  Salt
  • 1 1/2 c sliced (1/4 in.) peeled, seeded green papaya
  • 1 onion (6 oz.), peeled & sliced
  • 3 tbsps chutney, sliced
  • 1 tsp cornstarch
  • 1 tbsp curry powder
  • 1 tbsp salad oil
  • 12 iceberg or butter lettuce leaves (about 3 by 4 in.), rinsed & crisped

Directions
  • Step #1 In a 10- to 12-inch frying pan over high heat, stir oil, & turkey until meat is browned & crumbly, onion, about 7 mins.
  • Step #2 Add curry powder; stir until fragrant, about 30 seconds.
  • Step #3 Add papaya, broth, & chutney.
  • Step #4 Cover up & cook over med-heat/flame, stirring every once in awhile, until papaya is tender when pierced, 5 to 7 mins.
  • Step #5 Mix cornstarch & 2 tbsps water; stir in theto pan.
  • Step #6 Keep stirring until sauce boils, about 1 min.
  • Step #7 Add salt to taste.
  • Step #8 Scrape into a bowl.
  • Step #9 To eat, spoon turkey mixture into lettuce leaves & roll up.
  • Step #10 Nutritional analysis per first-course serving.
