Smoked Ham Salad On Gruyère Potato Coins Recipe

Ingredients
  • 1/2 lb lean smoked ham, finely sliced
  • 1 scallion, finely sliced
  • 2 long, thin Idaho potatoes, cut into 1/8 inch-thick slices
  • 1 tsp finely sliced tarragon
  •  Salt & freshly ground pepper
  • 1 tbsp finely sliced cornichons
  • 1 c shredded Gruyère cheese (about 4 oz)
  • 3 tbsps mayonnaise
  • 1 tbsp olive oil
  • 1 tbsp finely sliced capers
  • 2 tsps Dijon mustard

Directions
  • Step #1 Preheat the oven to 350° & line a baking sheet with parchment paper or foil wrap.
  • Step #2 Using a 2-inch round biscuit cutter, cut the potato slices into rounds.
  • Step #3 In a bowl, toss the potatoes with the olive oil & arrange them in a single layer on the baking sheet.
  • Step #4 Spice up lightly with salt & pepper, then sprinkle with the cheese.
  • Step #5 Bake the potato rounds for about 45 mins, or until deep golden; let cool.
  • Step #6 Transfer the potato coins to paper towels.
  • Step #7 In a small bowl, cornichons, mix the ham with the mayonnaise, capers, scallion, tarragon & mustard.
  • Step #8 Spice up with salt & pepper.
  • Step #9 Spoon the ham salad onto the potato coins & serve.
