Ingredients
2 tsps salt, divided
1 large egg, lightly beaten
1/2 c shredded Parmesan cheese
1/2 tsp garlic powder
1 lb russet or Idaho potatoes, peeled & cut into 2-inch pieces
Lime-Cayenne Mayonnaise
1 1/2 c sliced cooked chicken
1/2 tsp pepper
1/4 c sour cream
1/4 tsp grated lemon rind
2/3 c fine, dry breadcrumbs
1/2 tsp dried thyme
Vegetable oil
Directions
Step #1 Bring potatoes, 1 tsp salt, & water to cover to a boil in a small saucepan.
Step #2 Cook 20 mins or until tender; drain & mash potatoes.
Step #3 Stir together mashed potatoes, remaining 1 tsp salt, chicken, & next 7 ingredients.
Step #4 Chill mixture 1 hr.
Step #5 Shape into 1 3/4-inch balls.
Step #6 Place dry breadcrumbs in a shallow dish.
Step #7 Roll balls in breadcrumbs, coating evenly.
Step #8 Pour oil to a depth of 4 inches into a Dutch oven; heat to 370°.
Step #9 Fry fritters, in batches, 2 mins or until golden brown.
Step #10 Drain on wire racks over paper towels, & serve as soon as possible.
Step #11 Serve with Lime-Cayenne Mayonnaise.
