Chicken-and-mashed Potato Fritters With Lime-cayenne Mayonnaise Recipe

Ingredients
  • 2 tsps salt, divided
  • 1 large egg, lightly beaten
  • 1/2 c shredded Parmesan cheese
  • 1/2 tsp garlic powder
  • 1 lb russet or Idaho potatoes, peeled & cut into 2-inch pieces
  •  Lime-Cayenne Mayonnaise
  • 1 1/2 c sliced cooked chicken
  • 1/2 tsp pepper
  • 1/4 c sour cream
  • 1/4 tsp grated lemon rind
  • 2/3 c fine, dry breadcrumbs
  • 1/2 tsp dried thyme
  •  Vegetable oil

Directions
  • Step #1 Bring potatoes, 1 tsp salt, & water to cover to a boil in a small saucepan.
  • Step #2 Cook 20 mins or until tender; drain & mash potatoes.
  • Step #3 Stir together mashed potatoes, remaining 1 tsp salt, chicken, & next 7 ingredients.
  • Step #4 Chill mixture 1 hr.
  • Step #5 Shape into 1 3/4-inch balls.
  • Step #6 Place dry breadcrumbs in a shallow dish.
  • Step #7 Roll balls in breadcrumbs, coating evenly.
  • Step #8 Pour oil to a depth of 4 inches into a Dutch oven; heat to 370°.
  • Step #9 Fry fritters, in batches, 2 mins or until golden brown.
  • Step #10 Drain on wire racks over paper towels, & serve as soon as possible.
  • Step #11 Serve with Lime-Cayenne Mayonnaise.
