Three-pepper Quesadillas Recipe

Ingredients
  • 1/2 c sliced Vidalia or other sweet onion
  • 1 c (4 oz) shredded reduced-fat Monterey Jack cheese
  • 1/2 tsp salt
  • 1 c finely sliced yellow bell pepper
  • 1/2 tsp ground cumin
  •  Cooking spray
  • 1/4 tsp freshly ground pepper
  • 1 tbsp finely sliced seeded jalapeño pepper
  • 8 (6-inch) corn tortillas
  • 1 c finely sliced red bell pepper

Directions
  • Step #1 Combine first 7 ingredients in a bowl.
  • Step #2 Place a large skillet coated with cooking spray over medium-high heat until hot.
  • Step #3 Add 1 tortilla, & top this with 1/4 c bell pepper mixture.
  • Step #4 Sprinkle top with 1/4 c cheese; top this with 1 tortilla.
  • Step #5 Cook 2 mins on each side or until golden, pressing down with a spatula.
  • Step #6 Repeat procedure with remaining tortillas, bell pepper mixture, & cheese.
