Shrimp Cocktail With Tropical Fruit Salsa Recipe

Ingredients
  • 1 poblano chile, halved & seeded
  • 1/4 c sliced fresh cilantro
  • 1 c finely sliced peeled mango
  • 24 jumbo shrimp (about 1 1/2 lbs)
  • 1/3 c finely sliced red onion
  •  Cooking spray
  • 1 c finely sliced peeled papaya
  • 1 jalapeño pepper, halved & seeded
  • 1/4 c fresh lime juice
  • 1/2 tsp salt

Directions
  • Step #1 Peel & devein shrimp; set aside.
  • Step #2 Preheat broiler.
  • Step #3 Place poblano chile & jalapeño pepper halves, skin sides up, on a foil wrap-lined broiler pan; flatten with hand.
  • Step #4 Broil 10 mins or until blackened.
  • Step #5 Place in a zip-top plastic bag; seal.
  • Step #6 Let stand 10 mins.
  • Step #7 Peel & finely chop, & place this in a bowl.
  • Step #8 Add mango, red onion, papaya, juice, cilantro, & salt.
  • Step #9 Heat a large nonstick skillet over medium-high heat.
  • Step #10 Coat pan with cooking spray.
  • Step #11 Add shrimp; sauté 2 1/2 mins on each side or until done.
  • Step #12 Place 1/2 c salsa in center of each of 6 small serving plates; arrange 4 shrimp over salsa.
