Enlightened Guacamole Recipe

Ingredients
  • 3 tbsps coarsely sliced cooked artichoke bottom (see notes)
  • 8 c (about 4 1/2 oz.) low-fat baked tortilla chips
  • 1 fresh jalapeño chili, stemmed, seeded, & coarsely sliced
  • 2 tbsps lime juice
  •  Salt
  • 2 tbsps coarsely sliced fresh cilantro
  • 1/4 c thawed frozen peas
  • 1 soft-ripe avocado (3/4 lb.), pitted, peeled, & coarsely sliced
  • 1 green onion (ends trimmed), cut into 2-inch pieces

Directions
  • Step #1 In a food processor/blender, whirl onion, avocado, peas, cilantro, artichoke, chili, & lime juice until a chunky paste.
  • Step #2 (Or with a knife, finely chop vegetables; add lime juice in step ) Scrape mixture into a bowl & add salt to taste.
  • Step #3 Serve with chips for dunking.
