Atlantic Smoked Salmon With Johnnycakes And Caviar Recipe

Ingredients
  • 2 tbsps vegetable oil
  • 1/2 tsp salt
  • 1 c johnnycake cornmeal
  • 1 1/4 c milk
  • 1 large egg, lightly beaten
  • 1 lb smoked salmon, thinly sliced
  • 18 fresh Italian parsley sprigs
  • 1 (3.5-oz) jar lumpfish or other black caviar
  • 3/4 c crème fraîche or sour cream (optional)

Directions
  • Step #1 Combine first 4 ingredients, stirring just until dry ingredients are moistened; stir in the oil.
  • Step #2 Let batter stand 20 mins.
  • Step #3 Pour 1 1/2 tbsps batter for each johnnycake onto a hot, lightly greased griddle.
  • Step #4 Cook johnnycakes until tops are covered with bubbles & edges look cooked; turn & cook on the other side.
  • Step #5 Keep warm.
  • Step #6 Top johnnycakes evenly with sliced salmon, black caviar, & a sprig of parsley.
  • Step #7 Serve with créme fraîche, if desired.
