Toasted Pita With Mint, Cucumber, And Tomato Salad Recipe

Ingredients
  • 1/4 c sliced fresh mint
  • 1/4 c fresh lemon juice
  • 3 (6-inch) pitas, cut into 8 wedges
  • 1/2 tsp salt
  • 1/3 c thinly sliced green onions
  • 1 1/2 c sliced peeled English cucumber (about 1)
  • 1 tbsp sliced fresh cilantro
  • 1/3 c sliced fresh flat-leaf parsley
  • 1/4 tsp freshly ground black pepper
  • 2 tbsps extravirgin olive oil
  • 2 garlic cloves, minced
  • 3 3/4 c sliced tomato (about 3 medium)

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Combine first 5 ingredients In a large-ish bowl, stirring with a whisk.
  • Step #3 Add tomato & next 5 ingredients (through fresh cilantro); toss well.
  • Step #4 Arrange pita wedges in a single layer on a baking sheet.
  • Step #5 Bake at 425° for 6 mins or until golden.
  • Step #6 Serve with salad.
