Ingredients
1 (2-inch) cinnamon stick
2 lbs cipollini onions, peeled
1 1/4 lbs tomatoes, cut in half crosswise (about 3 large)
1 tsp ground coriander
2 tbsps sliced fresh cilantro
Cooking spray
3 thyme sprigs
1/4 tsp freshly ground black pepper, divided
1 (3-inch) orange rind strip
1 tsp brown sugar
2 bay leaves
1/2 tsp salt, divided
2 garlic cloves, sliced
1 c vegetable broth
2 tbsps fresh orange juice
1/4 c dried currants
1/4 tsp ground cumin
Directions
Step #1 Preheat oven to 375°.
Step #2 Sprinkle top garlic evenly in bottom of a 13 x 9-inch baking dish coated with cooking spray.
Step #3 Arrange tomato halves, cut sides down, over garlic.
Step #4 Sprinkle top with 1/4 tsp salt & 1/8 tsp pepper; lightly spray tomato halves with cooking spray.
Step #5 Bake at 375° for 55 mins or until tender.
Step #6 Remove from oven; cool in dish.
Step #7 Place tomato mixture in a mixer or food processor/blender, reserving liquid in baking dish.
Step #8 Process tomato mixture until smooth; strain through a sieve into a large bowl.
Step #9 Discard solids.
Step #10 Add reserved liquid to bowl.
Step #11 Heat a large nonstick skillet coated with cooking spray over medium-high heat.
Step #12 Add onions, & sauté for 8 mins.
Step #13 Remove onions from pan.
Step #14 Add coriander, cumin, & cinnamon to pan, & sauté for 1 min.
Step #15 Add onions, pureed tomato mixture, broth, 1/4 tsp salt, 1/8 tsp pepper, & next 4 ingredients (broth through orange rind) to pan.
Step #16 Bring to a simmer over med-heat/flame, & cook for 30 mins or until onions are tender & sauce is thick, stirring every once in awhile.
Step #17 Remove from heat, & stir in the orange juice & sugar.
Step #18 Remove cinnamon stick, bay leaves, & orange rind.
Step #19 Sprinkle top with cilantro.
