Oysters With Mignonette Ice Recipe

Ingredients
  • 1/2 c dry red wine*
  • 1 c red wine vinegar
  • 1/2 to 3/4 tsp salt
  • 1 tbsp minced shallot
  • 1 tsp sugar
  • 1/4 tsp freshly ground pepper
  •  Rock salt
  • 24 oysters in the shell

Directions
  • Step #1 Combine first 6 ingredients In a large-ish bowl, stirring until sugar dissolves.
  • Step #2 Pour mixture into a shallow dish; freeze, uncovered, 3 hrs or until firm.
  • Step #3 Flake ice mixture with a fork.
  • Step #4 Shuck oysters, discarding top shells; run knife under meat of oyster to release.
  • Step #5 Place half shells on a serving platter lined with rock salt.
  • Step #6 Spoon 1 tsp mignonette ice onto each oyster; serve as soon as possible.
  • Step #7 *For testing purposes, we used Pinot Noir.
  • Step #8 Note: To aid the shucking process, place oysters on a baking sheet.
  • Step #9 Bake at 350° for 15 mins to open shells slightly.
