Southwest Cheesecake Recipe

Ingredients
  • 1/4 tsp salt
  • 3 large eggs
  •  Tortilla chips or crackers
  • 1 medium-size tomato, seeded & sliced
  • 1 (4-oz) can sliced green chiles, drained
  • 2 c (8 oz) shredded Monterey Jack cheese
  • 1/4 c butter, softened
  • 1 1/2 c finely crushed blue tortilla chips
  • 1 c fresh or frozen guacamole (thawed)
  • 3 (8-oz) containers sour cream, divided
  • 1 c thick & chunky salsa
  • 2 (8-oz) packages cream cheese, softened

Directions
  • Step #1 Combine crushed tortilla chips & 1/4 c softened butter, & press into bottom of a lightly greased 9-inch springform pan.
  • Step #2 Bake at 350° for 12 mins.
  • Step #3 Cool in pan on a wire rack.
  • Step #4 Beat cream cheese, shredded cheese, & salt at medium speed with an electric mixer 3 mins or until fluffy.
  • Step #5 Add 1 container sour cream, beating until mixed.
  • Step #6 Add eggs, 1 at a time, beating until mixed after each addition.
  • Step #7 Stir in salsa & chiles.
  • Step #8 Pour over prepared crust.
  • Step #9 Bake at 350° for 40 mins or until center is almost set.
  • Step #10 Remove pan from oven; let this stand 10 mins on a wire rack.
  • Step #11 Gently run a knife around edge of pan to loosen sides.
  • Step #12 Remove sides of pan; let cheesecake cool completely.
  • Step #13 Stir together remaining 2 containers sour cream until smooth; spread evenly over top of cooled cheesecake.
  • Step #14 Cover up & chill at least 3 hrs or up to 1 day.
  • Step #15 Spread evenly with guacamole; sprinkle with sliced tomatoes before serving.
  • Step #16 Serve with tortilla chips.
