Ingredients
Lemon wedges (optional)
Cilantro sprigs (optional)
1/4 c coarsely sliced onion
1 garlic clove
1/4 tsp salt
6 (4-oz) skinned, boned chicken breast halves, cut into 1/2-inch-wide strips
1/4 tsp ground red pepper
1/4 tsp ground turmeric
1/4 tsp ground cumin
1 tbsp extra-virgin olive oil
1/4 c plain low-fat yogurt
1/4 tsp black pepper
1/2 tsp ground coriander
Vegetable cooking spray
1/2 tsp sliced peeled gingerroot
Directions
Step #1 Place the first 11 ingredients in a food processor/blender; process until smooth, scraping sides of processor bowl once.
Step #2 Combine yogurt mixture & chicken In a large-ish zip-top heavy-duty plastic bag.
Step #3 Seal bag, & marinate in refrigerator 2 hrs, turning bag every once in awhile.
Step #4 Remove chicken from bag, & discard marinade.
Step #5 Thread chicken strips onto 24 (6-inch) skewers.
Step #6 Place skewers on broiler pan coated with cooking spray, & broil 6 mins on each side or until chicken is done.
Step #7 Arrange skewers on a serving platter, & garnish with lemon wedges & cilantro sprigs, if desired.
