Tandoori Chicken Sate Recipe

Ingredients
  •  Lemon wedges (optional)
  •  Cilantro sprigs (optional)
  • 1/4 c coarsely sliced onion
  • 1 garlic clove
  • 1/4 tsp salt
  • 6 (4-oz) skinned, boned chicken breast halves, cut into 1/2-inch-wide strips
  • 1/4 tsp ground red pepper
  • 1/4 tsp ground turmeric
  • 1/4 tsp ground cumin
  • 1 tbsp extra-virgin olive oil
  • 1/4 c plain low-fat yogurt
  • 1/4 tsp black pepper
  • 1/2 tsp ground coriander
  •  Vegetable cooking spray
  • 1/2 tsp sliced peeled gingerroot

Directions
  • Step #1 Place the first 11 ingredients in a food processor/blender; process until smooth, scraping sides of processor bowl once.
  • Step #2 Combine yogurt mixture & chicken In a large-ish zip-top heavy-duty plastic bag.
  • Step #3 Seal bag, & marinate in refrigerator 2 hrs, turning bag every once in awhile.
  • Step #4 Remove chicken from bag, & discard marinade.
  • Step #5 Thread chicken strips onto 24 (6-inch) skewers.
  • Step #6 Place skewers on broiler pan coated with cooking spray, & broil 6 mins on each side or until chicken is done.
  • Step #7 Arrange skewers on a serving platter, & garnish with lemon wedges & cilantro sprigs, if desired.
